This turned out AMAZING! I had an issue with the center not being cooked all the way so I ended up keeping it in the oven for a little bit too long so the edges were a little overcooked, not bad though =] I would just recommend letting it be a little bit under cooked in the center to keep the edges less dry! Overall though its super moist and if you keep the bananas a little chunky it turns out even better.
- The best banana bread ever!
- 2 eggs, beaten
- 1/3 cup buttermilk
- 1/2 cup vegetable oil
- 1 cup mashed bananas
- 1 1/2 cups white sugar
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Cinnamon Spread
1 package cream cheese, softened (8 oz)
3 tbsp. confectioners sugar
1/2 tsp. ground cinnamon
- Preheat oven to 325 degrees F (165 degrees C). Spray one 9x5 inch loaf pan with non-stick spray coating.
- Blend together the eggs, buttermilk, oil and bananas.
- Sift together the sugar, flour, baking soda and salt. Add to banana mixture and mix well.
- Pour into prepared loaf pan and bake 1 hour and 20 minutes or until a cake tester inserted in the center comes out clean.
- Combine cinnamon spread ingredients until smooth. (MAKE THIS! SO DELISH!)
